First Course:    Seared Diver Caught Scallop over a bed of robust Baby Greens, Blueberry Compote, drizzled with a Charred Bacon Vinaigrette.  Paired with : Chenin Blanc, Ernie Els “Big Easy “ (South Africa)

Second Course:  Grilled Rainbow Trout with Caper Brown Butter over Lemon and Braised Artichoke Risotto.  Paired with:  Dry Rosé , Unparalleled “Provence” ( France)

Third Course:  Coffee Seared Prime Petite Filet of Beef with Vanilla Sea Salted Butter, Parsnip Puree, and grilled Baby Carrots.  Paired with:  Reserve Red , Charles Krug “Generations” Napa (California)

Fourth Course:  Grilled Peach Stuffed with fresh Raspberry Infused Mascarpone and sprinkled with a Pecan Crumble.  Paired with: Lambrusco, Medici Ermite “Dolce” (Italy)
